In my recipe for German mustard I also include xanthan gum, which is a natural product from corn and is used to give the mixture its characteristic hot, tangy taste. Although I have not tried cooking with dried gums, I have roasted corn bread with dried gums and it turned out to be delicious! It was also very tasty, if I didn’t add the xanthan gum. You will probably want to try it to see what it will taste like, but if you try this recipe you will definitely know whether to add the gum or not.

To make this dish you will require three tablespoons of dry mustard, three tablespoons of margarine, two teaspoons of dried fruit (pepper), two tablespoons of Worcestershire sauce, four ounces of beer, and one pint of skim milk. Bring all these ingredients to a boil in a sauce pan and cook gently for about one hour. Once it has come to the end of the cooking process, stir and then let it cool off.

Then you can serve it with sliced or chopped dill and lemon wedges. If you like, you can also add chopped peppercorn, coriander and parsley to the mix for an added flavor. If serving it with potato salad, you can cut up a wedge of crisp celery and place it in the middle of the salad and cover with the German mustard. If you add spices to the mix, you may want to do so sparingly and mix in enough to enhance the flavor rather than overpowering it.
